As the foundation for our continuing series of single-origin coffee experiments, we chose barrels of our wheat imperial stout, Genealogy of Morals, that had rested in select bourbon barrels for more than two-and-a-half years. That beer was blended and then conditioned atop coffee beans grown by Edwin Martinez in Huehuetenango, Guatemala, and sourced and roasted by our age-old friends at the Coffee Collective in Copenhagen.
