Most of our favorite hop varieties were once unnamed members of an experimental hop breeding project. Citra, for example, was once HBC (Hop Breeding Company) 394, and Mosaic was HBC 369. In the coming years, we will brew with a number of new and yet to be released/commercialized hop varieties. Some of these will be from large, private hop breeding programs in the United States, and other trials will come from our partner farm in New Zealand (where we provide input to the future of their development efforts!).
