Farmstead® Ale with Apples Aged in Oak Puncheons
Our Leaves of Grass series represents our collective pursuit to create, explore, and expand our often boundaried understanding of beer and fermentation. For each batch, we employ uniquely different processes and ingredients. This particular Farmstead® ale was brewed with American and European malt, organic oats, organic spelt, an assortment of apple varieties from Elmore Roots in Elmore, Vt., and aged in oak puncheons. We have observed this beer’s evolution during its extended bottle conditioning—a period of more than three years—witnessing the transitional nature of the nuanced aromatic and flavor compounds.
