Lemon Cello


Double IPA Brewed with Lemon Zest, Lemon Juice, and Lactose Sugar, and Fermented in Oak Foudres with a Mixed Culture

To celebrate the 10th anniversary of Grassroots Brewing, Shaun Hill of Hill Farmstead brewery traveled out to Colorado in November 2019 to meet Ryan Witter, now of Casita Cerveceria, Jean Broillet IV from Tired Hands Brewing, and Chad Yakobson of Crooked Stave to reimagine two classic Grassroots beers: Lemon Cello IPA and Wachu Saison. ⁣

Lemon Cello IPA was originally brewed in 2010 for the Rate Beer summer gathering in Rome. Shaun and Ryan set out to create a beer reminiscent of the popular Italian drink, Limoncello. Crafted from oats, lactose, lemon juice, and lemon zest, and then kettle soured, it was a landmark beer: hopped as a double IPA, sour, citrusy, with a creamy full body. This new version omits the kettle sour and instead opts for mixed culture fermentation in foudres.
