Ale Aged in Bourbon, Cognac, and Port Barrels
This is the seventeenth entry in our continuing exploration of blended barrel-aged stouts and porters. As is often the case, fate, and fortuitous kismet provided a unique, optimistic array of selections from which to shape a novel emergence. We wove threads of Damon, Everett, and Genealogy of Morals—each of which had begun their journeys in 2019 and rested for more than three years between both Bourbon and Port barrels; this collection was then integrated with Once Upon a Time in Denmark… Biscotti, which had been conditioned in a Bourbon barrel from Whistle Pig Whiskey in Shoreham, Vt. Finally, sparked by whimsy, a small amount of Aaron was included, which had spent four years between Cognac and Port barrels.
This collection continues to represent a panorama of our barrel-aging program: oak-aged beers that emerge from their individual silences to find structure and voice as a unified composition.
