Batch #1: 2011 - 750ml
Phenomenology of Spirit is our first collaborative saison - brewed with friends at Tired Hands, McKenzie, and our sister brewery, Grassroots in Denmark. This unique, Dark Saison was primary fermented in french oak wine casks along with multiple strains of brettanomyces and resident microflora. All of our collaborative beers receive names in the likeness of the great philosophical work that suits them. In this case, Hegel’s masterwork, which posits a foundation of dialectic and consciousness - seems to summarize the Spirit of this Saison.
Batch #2: 2013 - 375ml
This bottling of our Dark Farmhouse Ale, Phenomenology of Spirit, was cooled overnight, exposed to winter air and 100% spontaneously fermented in oak barrels through the introduction of airborne yeast residing in and around our brewery. The beer has rested, quietly, in a diverse selection of oak barrels for nearly 18 months. Naturally carbonated and unfiltered, we feel that this is an authentic expression of our environment and of our brewery.
Batch #3: 2016 - 750ml
This unique offering was primary fermented and aged in French oak wine barrels.
Batch #4: 2018 - 750ml
This version of our dark Farmstead® ale was aged for more than 8 months in oak barrels. The final blend is composed of Spirit aged in red wine barrels as well as bourbon barrels that had formerly been used to age our maple imperial stout.
Batch #5 - 20210104 375ml
This 2021 adaptation achieved its recognition following a year-long period of becoming in second-use Port wine barrels with our resident microflora.
