Behind The Beer: Everett

Everett (1908-1939) was our great uncle and the father of Shirley Mae (1936 – 2015). One of fourteen siblings who grew up on the land where Hill Farmstead now stands, he maintained a farm in Greensboro throughout his life, which was tragically cut short by a tractor accident at just age 31.  

Everett’s namesake porter was the first dark beer brewed at Hill Farmstead, a roasty, complex ale inspired by Shaun’s experience living and brewing in Copenhagen in 2008 and 2009. At the time, Shaun was captivated by a suite of rich dark ales made by his Danish friends and colleagues, including Mikkeller’s Beer Geek Breakfast Stout, Thisted Bryghus’s Limsfjordsporter, and, perhaps most of all, Ølfabrikken Porter, a robust Scandinavian porter brewed by our friend Christian Skovdal Andersen, owner of Beer Here on the island of Bornholm in Denmark.

In June of 2010, shortly after Hill Farmstead opened its doors, Andersen visited the brewery and joined Shaun in crafting a beer that sought to emulate Ølfabrikken Porter while asserting itself as a unique dark ale that we could call our own. The result of that collaboration was Everett, an elegantly rich American porter crafted with American malted barley, English and German roasted malts, our ale yeast, an assortment of natural sugars, and water from our well.

Although we released much of that first batch of Everett in 2010, Shaun set aside a portion to age in Buffalo Trace Bourbon barrels that had been used in the making of Samuel Adams’ Utopias, resulting in our first round of barrel-aged Everett, released in December 2010. In the years since, as we’ve continued to brew and release Everett, we’ve periodically offered an elevated, imperial version of the porter, brewed separately and aged in select spirit barrels from our favorite distilleries.

Everett is currently available in the taproom on draft, as well as in cans and growlers to take away. 

We will also release a new iteration of barrel-aged Everett in mid-February, this one aged in Bourbon barrels for more than 18 months and then conditioned in the bottle for nearly a year prior to release. Check our website and social media channels for details soon.
