Last year, we debuted Symposia, our single-decocted Old World German-style rauchbier, and for Harvest Festival week, we will offer a bottle-conditioned edition for the first time. Bottles will be available to-go in our bottle shop beginning Wednesday, 16 September.

Using malts smoked here at Hill Farmstead, then lagered for more than six weeks before krausening with fresh-fermenting beer to provide slow, natural carbonation, this beer has been cold-conditioned in the bottle for nearly three months before release.

Originally conceived for our 10th Anniversary, Shaun wrote this recipe from sensory memory of his favorite trips to Bamberg and drinking this classic style on draft in Copenhagen over the last two decades. 

Symposia will also be available on draft by the glass in the taproom all week and during the Harvest Festival on Saturday.
