Viola Sofia
Grassroots Brewing, circa 2005, was the conceptual precursor to Hill Farmstead Brewery. What began in Denmark in 2009 has evolved over the last decade-plus into a parallel brand and domain for creative collaborations.
This imperial stout was originally brewed by Ryan Witter-Merithew in 2011 at Fanø Bryghus, Denmark, for Rome’s legendary Ma Che Siete Venuti A Fà to celebrate the birth of the owner’s daughter. This reenvisioning of the original recipe benefits from the experience and learning inherent in a decade of growth. This version is 10% abv and more rich and velvety than it was over a decade ago—one might taste the inspiration of Damon and the early structure of Danish-derived recipes. As with all of our bottles, this imperial stout is bottle conditioned.
Our retail shop’s bottle selection will also include Vera Mae 2022; Pear: 2021 Harvest; Works of Love: Russian River Brewing/The Lost Abbey; Anna: Motueka; Charlie; Sankt Hans; Civil Disobedience Blend 36; Biere de Norma; Wheat Blanc; Nonconformist 07; and guest offerings.
Additional canned offerings include Of First & Last Things (IPA); Double Motueka (DIPA); and Mary (German-style Pilsner).
