Celebrating Shaun’s time in Copenhagen

Birth of Tragedy: Bekele • Sankt • Coffee Collective Coffees • Mikkeller 20th Anniversary IPA • Fresh Cans

Hill Farmstead may not have existed were it not for the 2 years that Shaun Hill spent living and brewing in Copenhagen prior to returning home to open his brewery.  In celebration of those friendships and that period of time, beginning Wed., 27 Aug., we will debut a special Coffee Collective version of our Bourbon barrel-aged imperial porter, Birth of Tragedy; corresponding Coffee Collective coffees; a new iteration of our barrel-aged amber Farmstead® ale, Sankt; a celebratory IPA to mark the 20th anniversary of Mikkeller Beer; and three new canned offerings: Susan (IPA), Dharma Bum (IPA), and Double Motueka (DIPA).

Our food vendors for the week: Weds., Thurs., and Sat. – Pearl Street Pizza; Fri. – Morse Block Deli; and Sun. – MexiRico Áuthentico.

Birth of Tragedy: Bekele

Birth of Tragedy is the imperial version of our annual winter porter, Twilight of the Idols. Brewed with coffee and Vermont honey, we aged this beer in Bourbon barrels for nearly two years, then selected a single barrel as the base for this single-origin coffee experiment, which was conditioned atop Ethiopian Bekele beans sourced and roasted by Shaun’s near and dear friend Casper at The Coffee Collective in Copenhagen, Denmark. 

In concert with this release, we will also have this coffee available for purchase, along with three other Coffee Collective selections.

Sankt

Originally brewed with Peter Sonne and Christian Skovdal Andersen on Sankt Hans Day 2012, two of Shaun’s closest friends from his time spent brewing in Copenhagen, this wine barrel-aged version of Sankt Hans has contributed to some of our favorite blends in the Civil Disobedience series. Brewed and placed into barrels in February of 2020, then nearly two years in oak, the result is a refined, uniquely expressive version of Sankt Hans.

Mikkeller 20th Anniversary IPA

One of Shaun’s close friends from his time spent living and brewing in Copenhagen, Mikkel was an early supporter and vital contributor to the success of Hill Farmstead.  To mark the celebration of Mikkeller’s 20th Anniversary, we brewed a special batch of IPA with Simcoe® and Strata for the occasion. While most of the beer will be shipped to Copenhagen for them to celebrate on 13 September, we will have a small amount available in our taproom to enjoy by the glass and in growlers this week!
