The Week of 7 October
Biere de Norma 2025 • Self-Reliance: Manilita • Genealogy • Leaves of Grass: Bavarian Pilsner
As we move into the cooler months, we’ll shift our bottle release rhythm to a less frequent cadence – focusing on monthly releases of our new Farmstead bottles rather than weekly. In the weeks between, we’ll continue to share freshly packaged cans and special draft offerings.
Biere de Norma 2025
Norma (1939–2011), Shaun’s maternal grandmother, remains an enduring presence in the spirit of Hill Farmstead. In her honor, we craft this Biere de Mars and condition it in oak barrels for over a year with our resident microflora, allowing it to develop until it is ready for release. Her memory, and that of our loved ones, continues to shape our work.
Self-Reliance: Manilita
This release was conditioned in our puncheons for three months and hopped with Manilita, an experimental hop variety that has emerged from our partnership with New Zealand’s Hāpi Hop Research Centre and Freestyle Hops.
Genealogy (Vanilla)
This non-barrel-aged base beer of Genealogy of Morals is brewed with malted wheat and coffee and was additionally aged with organic Madagascar vanilla beans.
