Retail Update for 8 February 2023

Clover • Society & Solitude #13 • Susan

This week, a new iteration of Clover (an unparalleled blend comprised of our favorite barrels of Ann, Art, and Flora) makes its appearance for takeaway and enjoyment in our taproom. We will allocate bottles each retail day for online ordering (same-day pick-up only). Beginning at 8 a.m. each morning (Weds., Thurs., Fri., and Sat.), our Toast online store will go live (toasttab.com/hillfarmstead/) through which you can place your order for Clover and any other items available in the shop. This ensures availability each day of this week and allows folks to arrive at any time during our open retail hours to complete their purchases. 

There is a strict limit of 3 bottles per person in total (3 x 375ml), which applies for the duration of the release, not each day. Our ordering system isn’t capable of imposing limits automatically, so please only order three bottles per person in total. Any orders with more than three (3) bottles will have their order reduced to the limit, and duplicate orders will be canceled. 

Also, we’ll debut a new entry in our Society & Solitude series—this one featuring HBC 586, Strata®, and Simcoe®—alongside freshly packaged Susan, both in cans and growlers. 

Clover

Clover (2005-2014) was an uncomplicated yet complex grey cat with whom we shared an all-too-brief moment and space. From time to time, guided by her ever-present spirit, we blend our favorite barrels of Ann, Art, and Flora, with the hopeful directionality of elegance, grace, and tasteful exuberance—each one a hallmark of our memory for her. The constituent components rested independently for between 16 to 27 months before their intertwined threading. As our Clover often would, this beer took its own path and its own time towards its becoming.

After two years of patient observation, an elevated, effervescent, refined reflection has emerged, one representing both our melancholy for her departure but, most importantly, our joy in traveling with her for a while.

Society & Solitude #13

The first entry in our exploratory Double IPA series debuted in early January of 2012 and represented a collaboration with Jeff O’Neil (then at Peekskill Brewery, now at the helm of Industrial Arts Brewing) that made use of fresh Cascade hops from Segal Ranch—a truly classic hop in a new context. Over the next decade, the series has allowed us the opportunity to try different combinations, new varieties, and novel expressions of hops and processes.

However, it has been more than four years since the debut of a new entry.

Society & Solitude #13 features HBC 586, Simcoe, and Strata® hops. Developed by the Hop Breeding Co. (a joint venture between John I. Haas and Yakima Chief Ranches), HBC 586 is our favorite HBC varietal in the last decade (since the release of Mosaic). Strata®—a variety developed by Indie Hops via Oregon State’s Aroma Hop Breeding Program—provides a unique complexity of aromas that buttresses the qualities we enjoy most with our hand-selected Simcoe® hops.

Canned offerings will also include…

  • Susan – American IPA brewed with hops from the Yakima Valley and Riwaka hops from New Zealand
  • Nelson Single Hop Pale Ale – Brewed exclusively with personally selected Nelson Sauvin hops from our agricultural partner, Freestyle Hops in New Zealand
  • Difference & Repetition: Simcoe®, Mosaic, Citra® – Exploratory IPA series
  • Double Citra – Imperial IPA brewed exclusively with Citra® hops (featuring 2022 harvest Citra®)
  • Marie – Marie, German-style Helles brewed with organic malted barley
  • Mary – German-style Lager with organic malted barley
  • George – Classic American Brown Ale
  • Society & Solitude #2 – Imperial Black India Pale Ale.

Our retail shop’s bottle selection will feature Genealogy of Morals: Vista Hermosa Sarchimor; Fear & Trembling; Convivial Suarez; Plum: 2021 Harvest; Clara; Charlie; Dorothy; as well as a number of curated guest bottles.

Glass pours of Ann also continue in our taproom each retail day through 25 February. No reservations are required.
