Biere de Norma 2021

On the weekend of her passing in early February 2011, Shaun set forth to honor the memory of his maternal grandmother with a unique and singular beer—a Biere de Mars that was fermented in oak barrels with our wild yeast and resident microflora—which would offer the endearing promise of complexity, warmth, and longevity. Throughout the last decade-plus, this beer has demonstrated a distinct aptitude for ascending evolution during extended aging. The particular shape of this beer lends itself to a substantive breadth of time to savor at various moments within its existence. 

This emergence was brewed in early spring 2020 and carefully aged in wine barrels for over a year. After four years of patient observation, it continues to exhibit celestial finesse, prolonged determination, and a delightful, captivating liveliness that most lovingly conjures the memory of Norma herself. 

Aaron: Cognac

Aaron A. Hill (1785-1869) was Edward’s great-great-grandfather who operated the original tavern in North Greensboro and upon whose original sign the Hill Farmstead Brewery logo is based. This iteration of his namesake barleywine-style ale has rested—unhurriedly and undisturbed—for nearly two years in Cognac barrels. Profoundly structured yet elegantly smooth, this beer is both a tribute and an indulgence, meant for those who appreciate the passage of time in a glass.

Legitimacy

First brewed in April 2013, this IPA was a frequent offering through early winter 2019. Since then, it’s been absent from our taps until this week. Generously hopped with hand-selected Citra®, Motueka, and Simcoe® hops, we welcome its return to both tap and newly designed cans!
