Over the course of the last decade, our Madness and Civilization collection has come to represent a unique creative outlet through which we are able to weave together threads from seemingly disparate barrels into harmonious compositions. The eighteenth entry unifies four unique paths: Everett aged for 20 months in a Rye barrel; Everett aged for 20 months in a Bourbon barrel; Viola Sofia aged in Bourbon for more than 36 months; and 15th Anniversary Stout aged for 29 months in a Rum barrel.
Dry-Hopped & Bottle-Conditioned Mary
With a nod to and great appreciation for the enduring German tradition of bottled lagers, we occasionally offer our German-style Pilsner in 500ml bottles. After lagering for 8 weeks in tank, Mary was lightly dry-hopped with Hallertau Mittelfrüh and then naturally carbonated in the bottle with fresh-fermenting krausen
Cans for the Week:
- Sumner – Pale Ale brewed with Citra®, Mosaic®, and Simcoe® hops.
- Foster – IPA brewed with Citra® and Simcoe® hops.
- Ephraim – Triple IPA brewed with a selection of our favorite hops from the Pacific Northwest.
- Everett – Porter crafted from malted barley, English and German roasted malts, and hops.
